THE CHOCOLATE:

The elusive Mulberry. It is the epitome of a flavour berry with potency in droves and being unrivalled in sharpness & sweetness. Not commercially grown in New Zealand, we have hand-harvested these with care from our family tree before freeze-drying, then adding them to milk chocolate at a high percentage. The result is sharp milk chocolate, unapologetically bursting with Mulberry.

Like blackberry but harvested from a tree instead of a vine, the Mulberry was once widely cultivated by most ancient civilisations. Hosting delicious berries, a large canopy to provide shade and leaves that could feed livestock, the trees were a popular choice in times of old. Today, mulberries aren’t commercially grown in New Zealand. We harvest ours carefully over January and early February from our family tree, which is over 100 years old. Then, our friends at FoodNerdit Wellington delicately freeze-dry them and add to the chocolate during conching. Boasting a sharp flavour, they pierce through the chocolate engulfed in sweetness and acidity.
